Ingredients
Basmati rice – 1 kg Mutton -1 kg Turmeric -1 tsp Black pepper powder-1 tbsp Ghee -2 or 3 tbsp Salt to taste Garlic 6 or 7 petals Ginger 1 medium Green chilli-4 or 5 nos Onion -4 or 5 nos Coconut milk – 1 cup Fennel seed- 1 tsp Cardamom-4 or 5 Curd 2 o3 tsp Coriander leaves –small amount. Mint leaves –small amount Star anise -2 Cinnamon -1
Method
Grind ginger,garlic,green chillies to coarse paste and set it aside. Then again we grind garam masala paste like (cardamom .cinnamon,star anise )etc and set a side In the pan, heat ghee , add the sliced onions saute it till it becomes golden brown In a large bowl add in the mutton pieces then we add turmeric powder black pepper powder,salt ,ghee, ginger garlic and green chili mix well Then we add the fine paste of garam masala, curd , coriander leaves and mint leaves ,mix well Again we add tomato and fried onion mix well
In the pan ,fry cashew nuts, raisins until light golden colour .remove from the ghee
and set a side Add 4 or 5 cups of water melt the ghee in a biryani pot and add in the spices like cinnamon ,cardamom etc
Then we add biryani rice and cover and cook Then we take a pan add oil and marinate mutton pieces and water mix well then we cook for 10 to 20 minutes Again we add coconut milk mix well and cook Take another biryani pot, place half the rice into it. Now layer the cooked flavourful mutton on the top of the rice. Add the remaining rice on top of the mutton. Spread the contents of the pan to make an even layer. Close the biryani pot with a lid,seal the edge of the lid with the prepared dough with out even the slightly open ing When the steam comes out of the dough switch off the flame and set a side Finally we open the kerala mutton dum biriyani recipe Enjoy the taste of briyani
